The canon reason is that the Jedi were more rumor and myth to the majority of the galaxy. Even at the height of their power and numbers, pre EP1, they only numbered about 10,000 in a galaxy of trillions and since they were essentially the enforcers and negotiators of the Senate, they spent most of their time dealing with the extreme upper crust of galactic society. The common person would've known about them only by reputation and the vast majority would've never seen a Jedi.

That being said, I get where you're coming from on it. Anakin on the backwater Tattooine knows about Jedi but Cara Dune doesn't despite Luke's role, and his well known abilities, among the Rebellion?

Fwiw, it's consistent with the original trilogy. Han says on the milenium falcon he doesn't believe in the force. Admiral Motti gets choked in a Death Star conference room because he thought Vader had no special powers.

In the prequels, "normal" people like the trade federation leaders, Anakin, and Watto are aware of the Jedi and the powerful nature of the force. However, none of these characters had seen a Jedi before.

In real-life, I think George Lucas had a strong vision for how far the Jedi fell, but he needed the height of the Jedi order to be within Anakin's lifetime. If you're looking for an in-universe explanation, just look at Palpatine. His motivation is to destroy the Jedi. After order 66, he had Vader seek out the stragglers. He may have used his power and influence to erase the Jedi from official history.

I think you raise a good point. I also find it strange that Mando hasn't heard of the Jedi even though he was orphaned from the Clone Wars.

I think it's fair to assume the Jedi weren't as involved in the galaxy-wide conflict as TCW suggests. Remember, you're seeing it all through the eyes of Anakin, mostly, and several council-level Jedi. The show has them appear for really important make-or-break battles, or to negotiate with important neutral planets, or when Dooku or Grievous are involved. But the Jedi may not be all that involved in the backwater planet battles. There just aren't enough Jedi available for each battle to be lead by one. And as the war goes on, there are less and less Jedi because losses are going to happen.

Then consider that Palpatine immediately pinned the blame for the Clone Wars on the Jedi once they'd concluded. Order 66 decimated their already dwindling numbers and Vader was sent to eliminate the rest one by one. Couple that with Imperial propaganda and maybe even outlawing Jedi or force-related items (lightsabers, holocrons, jedi texts, etc.) and I don't think it's too far-fetched for folks to not take The Force or Jedi very seriously.

That being said, the Prequels and TCW absolutely did a bad job of making the jump from "all the jedi" to "what's a jedi?" believable.

This episode was an absolute pleasure to watch. The opening scene with the bickering scout troopers was laugh-out-loud funny. The action sequences with IG-11 were original and cool as hell. Exposition in the middle of the episode gives us a taste of each character's backstory and answers questions we've asked the whole season. Baby Yoda was the cutest and most badass he's been all season. We're all set up for season 2, and get the see the DARKSABER in live-action! The episode is a testament to the talent behind the show.

Very minor gripe: I didn't like the "tell don't show" characterization of Moff Gideon. The guy is described as ruthless and dangerous. It says a lot that he's in possession of the dark saber. However, he didn't "feel dangerous" during his air-time in the episode. I hope that changes in season 2.

I thought the fact that he just threw out Mando's name in the episode randomly gave me the feeling that he was very dangerous. It was like he was this mythical character and all of a sudden Moff completely neutered him. Not only was Moff Gideon completely prepared and knew exactly who was hiding out in the bunker but if not for the incompetence of the stormtroopers and Waititi IG88 then it's very likely the child is dead.
